Sweet Potato Bowls: -2 cooked sweet potatoes (you can place them in the microwave for 3-6min. Puncture potatoes with a fork to allow it to be cooked through), cut in half, scoop out some of the middle -a can of garbanzo beans, and chopped spinach (raw or cooked) -add a tablespoon of olive oil to the garbanzo beans/ spinach, and salt/ seasoning to taste. -fill sweet potatoes with mixture, and enjoy!
Garlic Parmesan Asparagus - Preheat oven to 415 -Combine 1 tbs of olive oil, ½ tsp of salt, ½ tsp of ground black pepper, and 3 cloves of minced garlic -Stir together and then add grated parmesan cheese (usually around 1 tbsp) -Continue to stir mixture until it is all mixed -Lay tin foil over a pan and lightly coat asparagus with parmesan mixture -Sprinkle grated parmesan over asparagus and place in oven -Stir around asparagus after 4 minutes of baking and then leave in oven for another 4 minutes. Enjoy! You can eliminate the grated parmesan if you like for a healthier option.
